Yummy Mandarin Beef with Rice

This is a "yummy" make at home take out Chinese style meal! Very fast especially if you use an instant brown rice otherwise done and plated in approx 40 mins. Enjoy!

 Ingredients





  • 2 cups brown rice
  • 4 mandarin oranges
  • 1 pound beef flank steak, cut in half lengthwise and thinly sliced across gra 
  • 4 cloves garlic, crushed or 1 heap tbsp puree 
  • 2 tablespoon oyster sauce
  • 2 tablespoon  vegetable oil
  • 1 teaspoon ground ginger
  • Salt and pepper to taste  
  • 16 ounce  snow peas
  • 16 ounces white mushrooms, thinly sliced  
  • 6 scallions, cut into 1-inch pieces
Directions
  1. Cook the rice as label directs. In the meantime, remove peel from 1 mandarin. Squeeze the juice from the other mandarins. This should be approx 3/4 cup.  Place the peel, juice, oyster sauce, ginger, half of garlic, 1/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and beef into a large resealable bag. Seal bag and let stand 10 minutes.
  2. While the beef marinades heat a slosh or approx 1 tablespoon oil on medium-high until hot in a large skillet. Add the remaining garlic, mushrooms and a good pinch of salt. Cook for a few minutes until mushrooms are tender. Add snow peas and cook a further few minutes, stirring occasionally. Transfer to large plate.
  3. Add remaining oil to the same skillet,  and heat on medium-high until hot. Pour in the beef and marinade; cook until the beef is no longer pink. Pop in the mushroom mixture and scallions, toss about a bit to mix. Cook a further few minutes or until scallions have wilted, stirring occasionally. Serve with rice. This will feed approx 6 people.
